Literally speaking, there is no such thing as "pause" in multiplayer games. But you can achieve similar things with the following:
1. Vacation For games which honor vacation, you can go on vacation and you won't get booted even after the time limit. But vacation is not free without limits. A paid member can take 7 vacations per year. A free member can have 0-5 vacations per year depending on your levels.
2. Long boot rate Just set the game to have a long enough boot rate. The maximum you can set is 100 days. Let's say you expect you may want to pause the game for max 7 days sometimes. Then just set the boot rate as 7 days. Don't set too long, or play with people you trust. Otherwise, let's say you set it as 100 days, if one player abandons the game, you will have to wait for 100 days (to get them booted) before you can play the next move.

You could also use banked boot times, although that might be a feature that has to be unlocked at a higher level, I'm not sure. [Edit: thx inquisitor for the answer.]

and keep in mind playing games gives you points. more points gives you higher level. Higher level gives you more settings available and more maps. Have fun

Ever if that is set to never, you will still get booted after 100 days.
