When I go to create a game, the only templates I can use, is the Earth Map and Europe Map, How is everyone else creating games with other maps? I have beaten every single player Map.

Create game --> Select the players you want to play with --> change settings --> custom game --> maps --> set search to All maps (or something different, just not featured maps).

That way you should be able to access more maps, but since you are a low level player not all maps are available to you right now. Play the game more and you`ll unlock more maps :D
