Freakonomics published an article on tipping and racism.
It was of interest to me to read that with regard to the tipping behavior of restaurant patrons that, "Customers of both races discriminated against black service providers by tipping them less than white service providers."
So incredibly enough it would seen that black customers would prefer to have a white waitress or waiter. It could be disputed whether this is the case. However it would seem to be a plain matter of fact that black customers value white servers more highly than black servers on average.
