Hey all! I am a bit of a noob here but is there an option to disable auto-zoom when actions are being undertaken such as attacking and transferring armies?

if you mean when watching the orders go through after executing a move (or when replaying one), then no, it auto-zooms and changes camera location and you can't stop it

You can keep a thumb on the display while it is going on. Then it stops zooming in and out.
