What countries would be (fairly) safe from a not completely destroying the world nuclear war? (not un-affected, but large enough that bombs don't kill everyone or without many good targets)

Australia?
Brazil?
Siberia?
Argentina?
South Africa?

Australia would be targeted by China at least. And Australia has no "decent" army I mean no nuclear weapons etc. Totally dependent of its allies.
Brazil is a soon to be superpower, so another target.
Siberia?? you mean Russia the biggest nuclear nation??? then lel :P
Argentina is also a big economy in South America
South Africa was a nuclear power; Mandela dismantled it but who knows if they have still some secret and hidden nuclear weapons somewhere...

There is no safe place Thomas in case of Nuclear war, like what happened for Chernobyl or Fukushima we cannot contain a nuclear disaster... unless you go to the Moon.

lol just a French anecdote: just after the Chernobyl disaster, the French government said that radioactive waves could not pass or reach the French border! xD

The only save place to live in time of a nuclear war is the international space station (ISS), a unlikely risk is that supplies comming from earth contain radioactive material or that no supplies will be delivered to the ISS.
Another save heaven is an empire build IN the ocean and to live of seafood and oxigen made from water.
Nowadays countries also possess parts of the moon and Mars which means no country will completely vanish.

Albania has many bunkers...one for every three people, I think.

Your best would be the Seychelles, I think. Nice deserted area.

Any of the Pacific Island nations would be a good bet.

But would Pacific Island nations be able to survive without the help of other nations?

No where is "MOST LIKELY" to survive after Nuclear war. If the bombs don't get you, the after effects will.

I'd bet on SE America where there's a fair amount of bomb shelters left over from the cuban missile crisis, paranoid gun toting right win radicals keeping them fully supplied and not enough large cities to motivate a direct nuclear strike from anyone that would want to reach it.

Radiation in water

Most remote islands such as Polynesia would be safe. They survived for thousands of years in isolation before, they can do it again. Central Africa would be safe because who gives a shit about them? Antarctica would also be safe.
Also another misconception is about the radiation. Here's something for you fucking idiots who think avoiding radiation is as important as the initial blast. RADIATION IS NOWHERE NEAR AS DANGEROUS AS AN EXPLOSION RELEASING AS MUCH ENERGY AS A HURRICANE. Here's a statistic. Let's assume Hiroshima gets nuked again. Now, the initial blast would maybe kill a few hundred thousand depending upon the size of the bomb. But the amount of people who would die of cancer because of the bomb to the amount of people who would get non related cancer anyway is 1:20. This means that before, 100% of the people who will get cancer will get cancer. But after the bomb it's only 105%. And oh, you think drinking radiated water is bad? Well I'm not physicist, but I'm sure it would increase your risk of cancer by less than 0.1%

Here's another country: the U.S.. Yes. The US will most likely lose less than 5% of its population. Figure that one out on your own

I figured it out. Here is the answer.

The quality of mercy is not strain'd.
It droppeth as the gentle rain from heaven
Upon the place beneath. It is twice blest:
It blesseth him that gives and him that takes.
