Evidence is different from proof.
Proof is just a theoretical concept. It exists in theory, you can use proof in mathematics for example.But in reality, i.e natural science, absolute proof doesn't exist.
Here is one definition of a scientific fact/truth (see the previous link):
An assertion for wich there is so much evidence that is would be perverse to deny it
wich is another way to say evidence beyond reasonnable doubt (wich is th standard of evidence requiered on court room)
