The main part of Evolution that I do not follow is the long-term part of it, where a creature resembling nothing like a human eventually turns into one. I can believe in minor changes, such as larger brains and body sizes due to better nutrition and such, but farther than that and it gets difficult for me to believe.

And if you have lots and lots of small changes you`ll see a big change when only looking to the begin and the end. If you can understand the small changes, the big ones should make sense as well. They don`t happen over night ;)

Evidence is different from proof.

Proof is just a theoretical concept. It exists in theory, you can use proof in mathematics for example.But in reality, i.e natural science, absolute proof doesn't exist.
Here is one definition of a scientific fact/truth (see the previous link):

An assertion for wich there is so much evidence that is would be perverse to deny it

wich is another way to say evidence beyond reasonnable doubt (wich is th standard of evidence requiered on court room)
